Oolongs:  This is a  slightly fermented tea that is chiefly produced in China and Taiwan which in tea-speak is still referred to as Formosa.  Oolongs are whole leaf teas.  The leaves are picked at exactly the right moment and it is important that they are processed immediately after harvesting   Formosan oolong has been grown for 300 years.  The plants were originally taken from China's Fujian Province and planted in the north of the Taiwan.  Today most Formosa oolong comes from the region around Taipei.

Black Teas: These leaves have been through a careful fermentation process. Though there are many subtle variations, the basic method of fermentation is as follows: the harvested leaves are withered, then rolled to release the enzymes that cause fermentation.  Next, the leaves are spread out and monitored until they reach the right color and pungency.  Finally, the tea is heat dried, or "fired."
