Brewing Instructions
Green Teas
Use cool fresh water and heat, stopping short of boiling (about 180°F) to avoid cooking the leaves.
Rinse pot and cup with heated water.
Use 2.5 grams for each 6 ounce cup.
Brew green teas for 1 to 3 minutes (experiment).
Add water to weaken it if it is too strong.
Stir infusion, then pour the tea into a serving vessel or cups.
Leaves may be reused in subsequent infusions.
Add 20 – 40 seconds for each additional infusion.
Oolong Teas
Use cool fresh water and heat, stopping short of boiling (195-210°F) to avoid cooking the leaves.
Rinse pot and cup with heated water.
Use 2.5 grams for each 6 ounce cup.
Brew green teas for 1 to 3 minutes (experiment).
Add water to weaken it if it is too strong.
Stir infusion, then pour the tea into a serving vessel or cups.
Leaves may be reused in subsequent infusions.

Black Teas
Use cool fresh water, boiled to 212°F.
Rinse pot and cup with heated water.
Use 2.5 grams for each 6 ounce cup.
Brew black teas 3 to 7 minutes (experiment, First Flush Darjeeling is usually steeped for 3 minutes).
Add water to weaken it if it is too strong.
Stir infusion, then pour the tea into a serving vessel or cups.
Add sweetener, lemon, or milk if desired.
Home Decaffeinating
Measure the tea and pour water, heated to the appropriate temperature, over the leaves. After one minute, discard the liquid. Pour fresh heated water over the wet leaves and steep for the usual amount of time. Home decaffeinating will generally bring your tea into a range of about 2.5 to 10 milligrams of caffeine per cup, depending on the tea. There will be some flavor loss.
